Dry-aged ribeye, creamed spinach, potato mille feuille, roasted cipolinni onion, maitake mushroom & roasted garlic bordelaise

Lemon thyme olive oil cake with fromage blanc mousse, huckleberry coulis, semolina crumble & blood orange sorbet
